Fresh pork hand rubbed with salt, sugar and saltpetre then left to mature to give a rich full flavour without shrinking to half its original size when cooked. The matured pork is then cut into rashers and trimmed to remove the rind and excess fat.

Pork 96%, salt, sugar, preservatives, (E252, E250).
Keep refrigerated below 5*c. Once opened consume within 3 days and by the use by date.
